ABOUT Lemon Rice... RECIPE

A very popular crunchy, flavourful and sour South Indian rice recipe that is loved by many. It can be made with both raw and cooked rice. The peanuts add crunch to this dish and the lemon juice gives it a sour taste. This one can be used as a tiffin recipe too. Though it tastes best on it's own, it can be served with pickle or raita or any side dish of one's choice. Cashews and almonds can also be added to give it richness. This aromatic rice dish is therefore the first choice of many when there is some leftover plain cooked rice at home.

Ingredients Serving: 2

  1. Rice 2-3 cups
  2. Ghee 2 Tbsp
  3. Turmeric 1/2 tsp
  4. Asafoetida 2 pinches
  5. Salt 1 tbsp
  6. Lemon juice 2-4 tbsp
  7. Mustard seeds 1 tsp
  8. Peanuts 4-5 tbsp
  9. Bengal gram 1 tsp
  10. White lentils (urad dal) 1 tsp
  11. Curry leaves few
  12. Chilli flakes 1 tbsp
  13. Dry red chillies 3

Instructions

  1. Prepare the plain rice as per your convenience and set aside to cool down.
  2. In a non stick pot, heat ghee and add the mustard seeds.
  3. Keep the flame on low.
  4. After they crackle, add the curry leaves and the dry red chillies.
  5. Add the asafoetida.
  6. Add both the lentils.
  7. Let the colour change to a light golden.
  8. Now add the turmeric and the chilli flakes.
  9. However finely chopped green chillies can also be used.
  10. Add the peanuts now.
  11. Fry the peanuts for a while until crisp.
  12. Add the lemon juice and mix well.
  13. Finally mix in the rice.
  14. Cover and simmer for 8 to 10 minutes.
  15. Serve hot with pickle or omelette.
