ABOUT Chena kofta gravy(No onion/garlic) RECIPE

Its little twist in the recipe of malai kofta with use of chena and lauki [bottle gourd].

Ingredients Serving: 4

  1. For koftas:
  2. 250 gm chena [homemade fresh paneer/cottage cheese]
  3. 1-2 Green chillies
  4. 100g lauki
  5. 10-12 raisins
  6. 50g arrowroot [or cornflour]
  7. Chopped coriander leaves
  8. Salt to taste
  9. Oil for Deep frying
  10. FOR GRAVY:
  11. 3 Big size tomatoes
  12. 100 gm khoya
  13. 12-15 cashew nuts
  14. 1-2 Green chillies
  15. 1 inch ginger
  16. 1 tspn Garam Masala
  17. 1 tspb chilly powder
  18. 1 tspn turmeric powder
  19. 1 tspn coriander powder
  20. 2 tbspn low fat fresh cream
  21. Salt to taste
  22. 1 tbspn sugar(optional)
  23. oil for cooking
  24. Coriander leaves for garnishing

Instructions

  1. Kofta:
  2. Heat oil in a wok for deep frying koftas.
  3. Take all the ingredients of koftas, except oil in a mixing bowl.
  4. Grate lauki and boil it for a minute. Drain and squeeze all the water from it. Add lauki in the mixing bowl.
  5. Mix properly and make small lemon size balls.
  6. Now deep fry the kofta balls.
  7. Gravy:
  8. Soak cashews in hot water for 20 minutes.
  9. Put tomatoes, green chillies, ginger and soaked cashews in a mixer and make puree.
  10. Heat little oil in a wok.
  11. Pour the puree and stir it.
  12. As puree starts to boil then add crumbled khoya in it. Stir the mixture till it becomes smooth and no lumps.
  13. Add garam masala, turmeric powder, coriander powder, salt, red chilli powder, sugar. Stir and add water as per your gravy thickness requirement.
  14. When gravy comes to boil, Add low fat cream and stir.
  15. Garnish with coriander leaves.
  16. Add koftas to gravy 10 minutes before serving.
