Ingredients Serving: 4

  1. Pumpkin 1/2 kg (chopped into big pieces)
  2. Peppercorns 1/2tsp
  3. Butter 2 tbsp
  4. Fresh cream 1/2 tsp (to garnish)
  5. Coriander ( a small sprig to garnish)

Instructions

  1. Preheat the oven at 180° c for 10 minutes.
  2. Grease a baking tray with butter, spread the pumpkin pieces and the peppercorns and roast it for 10 minutes.
  3. Let the roasted pumpkin and peppercorns cool down and make a fine puree.
  4. Place a deep pan on low flame, add butter and let it melt, then add the pumpkin puree and let it simmer for 2 minutes.
  5. Now turn off the flame.
  6. Pour the soup into the soup bowl and garnish it with a dash of fresh cream and coriander sprig.
  7. Roasted pumpkin soup is ready to relish.
