ABOUT Roasted Pumpkin Soup RECIPE

A creamy ,rich almost low fat soup spiked with Syracuse Seasoning will satisfy all cravings in one bowl. And its gluten free super healthy too. You can roast in the oven or slow roast on the gas too.

Ingredients Serving: 2

  1. 1 kg red Pumpkin or Laal kaddu
  2. 1 tbsp Syracuse seasoning
  3. 2 tsp olive oil or vegetable oil
  4. 10-12 Garlic Cloves
  5. 5-6 sprigs thyme
  6. Sea salt or pink salt to taste
  7. 1 tsp extra virgin olive oil or coconut cream optional
  8. Herbs to garnish


  1. Peel the pumpkin and slice into thin slices.
  2. Place on baking tray or cast iron skillet with salt ,garlic herbs and vegetable oil.
  3. Bake at 160 C for 30 minutes or till caramalised and soft.
  4. Cool , drain the oils and reserve. Discard the herbs.
  5. Puree the pumpkin with garlic and roasting juices and water with Syracuse seasoning
  6. Warm slightly and serve with extra virgin olive oil and some herbs and seasoning sprinkled over.
