For making Charmoula Marination take all the ingredients and mix them together make sure you have enough olive oil in the marination so that it can coat the main ingredient easily.
Once the marinade is done then takes the cottage cheese into a size of steak and with a thickness of 1 ½ inch thickness.
For making the stuffing take a frying pan and heat up some olive oil into it. Once the olive oil is heated take the garlic and onion into the pan and sauté them till the time it is translucent in color.
Then add the blanched and chopped spinach to the pan once the spinach is cooked with garlic and onion then add the feta cheese and grated nutmeg to it.
Once the mixture of spinach is ready stuff it into cottage cheese steaks and marinade it for 2-3 hours.
Now take a grill pan/ Non stick pan and heat it up. Once the pan is hot then add the cottage cheese steak to it so that it can get some grilled color to it.
Once the color is there then put the cottage cheese steak in the oven at 200 degree Celsius for 10 mins so that it can get cooked from inside as well.
For making Bourbon sauce, take garlic, oil, BBQ sauce and bourbon in the pan and heat it up so that it can burn the Alcohol level.
Once the alcohol is burnt add the tomato puree to the sauce and finish it with the seasoning.
For presenting the cottage cheese steak you can present the steak with the mash potato, blanched vegetables and plate it with some sauce either on top of steak or on side.
