ABOUT Gujrati dhokla RECIPE

Gujrati naylon khaman dhokla, a yummy snack to be served with some green and tamarind chutney.

Ingredients Serving: 4

  1. Fine besan 2 cup
  2. Butter milk 1 cup or as required
  3. 1 sachet eno
  4. Salt to taste
  5. Turmeric pinch of( optional)
  6. For tempering :-
  7. 2 tbsp Sugar
  8. 1 tbsp lemon juice
  9. 1 tsp Salt
  10. 1 Cup water
  11. 1 tsp mustard seeds
  12. 2 tbsp Oil
  13. Asafoetida pinch of
  14. 3 Green chillies cut into slits
  15. 1 spring curry leaves
  16. Corriender leaves handful


  1. Make a batter with Bresan, buttermilk salt and turmeric
  2. Mix it well to avoid lumps and make it smooth by beating
  3. Heat a steamer and add water to boil
  4. Add eno and mix quickly
  5. Put the batter immediately in a greased plate and keep it in steamer
  6. Steam for 5 minutes for high flame and 15 minutes for low flame
  7. Meantime prepare tempering
  8. Add oil in a pan, add mustard seeds to crackle
  9. Now add curry leaves, green chillies, sugar ,salt, and Lemon juice
  10. Boil for 2 minutes and cool it
  11. Now check the dhoklas with a knife, if comes out clean, it's done, other wise Cook for another 5 minutes
  12. Switch off the flame cool the dhokla and cut into desired shape
  13. Pour the tempering on dhokla 9 sprinkle corriender leaves and serve
