ABOUT Stuffed Dum Aloo RECIPE

The yummy punjabi aloo dum , with some fluffy pooris would be a delicious breakfast for any occasion.

Ingredients Serving: 4

  1. 6 -7 mid size boiled potato
  2. 100 gram paneer
  3. Coriander fine chopped
  4. Salt as per taste
  5. pepper powder [as per taste]
  6. For gravy :
  7. 3-4 green chilly + 1 inch ginger piece [made into paste]
  8. 3-4 tomato paste
  9. 1 tablespoon curd
  10. 1 table spoon malai [optional]
  11. Cumin seeds - 1 tsp
  12. Coriander powder - 1 tsp
  13. Garam masala powder - 1/2 tsp
  14. turmeric powder - 1 tsp
  15. Red chilly powder - 1 tsp
  16. salt [as per taste]
  17. Cornflour - 2 tbsp [mixed in some water]

Instructions

  1. Take the paneer, crumble it and mix salt, pepper powder and coriander leaves. Mash and mix it.
  2. Now cut the potatoes into halves.
  3. Scoop out the pulp out of the potatoes.
  4. Fill in the potatoes with the paneer mix.
  5. Apply cornflour batter on edges of the filled potatoes.
  6. Cover it with empty pieces of the potatoes.
  7. do this for all the potatoes.
  8. Now deep fry them in hot oil till golden brown, keep aside.
  9. Heat a pan with some oil/ghee, add cumin seeds to it.
  10. Once these splutter, add the green chilly + ginger paste.
  11. Stir for few seconds and then add all the powdered masalas.
  12. Now add the tomato paste and cook for few minutes.
  13. Now add the curd and keep stirring continuously so that the curd doesn't curdle.
  14. After about a minutes, add the malai and give it a stir.
  15. Cook for sometime.
  16. Now add the water for the gravy and bring upto boil. Now add the fried stuffed potatoes.
  17. Simmer the flame and cook on a low flame for few minutes.
  18. While plating the dum aloo, cut the potatoes into halves and sprinkle some coriander leaves on top and serve.
