Ingredients Serving: 4

  1. ingredients for Parathas :
  2. wheat flour
  3. Turmeric Powder
  4. Ajwain/carrom seeds
  5. ingredients of kesar & elaichi curd:
  6. curd 1 big bowl
  7. Sugar as per taste
  8. kesar/saffron 10 strands soaked in 1tsp milk
  9. cardmom powder 1/2 tsp
  10. ingredients for dum Aaloo pyaaj :
  11. small size of baby potatoes
  12. small size of baby onions
  13. 4-5 tomatoe
  14. 2onions
  15. Garlic pods 7-8
  16. Red Chili Powder 1 Tsp
  17. salt as per tate
  18. Corriander powder 1 tsp
  19. Malai 1 tbsp
  20. Oil 3tsp
  21. Tejpatta [bayleaf] 1
  22. Cloves 2-3
  23. Cinnamon Stick 1
  24. Amul cream 1 tsp
  25. Kitchen king masala 1 tsp
  26. ingredients for mutter rice :
  27. boiled rice 1 big bowl
  28. mutter/green peas 3 tbsp boiled
  29. Turmeric powder 1/2 tsp
  30. Green chilly 1/2
  31. Salt to taste
  32. 1 lemon juice
  33. Curry patta
  34. ingredients for pakodi kadhi :
  35. curd 1 bowl
  36. Besan/gram flour 1 tbsp
  37. Curry leaves 4-5
  38. Green Chilly 1-2
  39. Salt to taste
  40. raita boondi half bowl
  41. water one glass
  42. Ghee 1 tsp
  43. Mustard seeds 1/2 tsp
  44. jeera 1/2 tsp

Instructions

  1. process for Parathas :
  2. take small portion of dough
  3. roll it little with rolling pin
  4. spread 1/2 tsp of ghee over it
  5. sprinkle 1/4 tsp of turmeric powder
  6. sprinkle some carrom seeds over it
  7. make roll of it
  8. now make round roll of this long roll
  9. roll it with rolling pin
  10. shallow fry on tawa
  11. process of saffron/kesar/elaichi curd :
  12. hung curd for 10-15 minutes
  13. add sugar to hung curd
  14. whisk till sugar melts
  15. add cardmom powder
  16. add saffron soaked in milk
  17. mix it and keep for chilling in fridge
  18. process of dum Aaloo pyaaj :
  19. peel potatoes and remove upper skin
  20. prick them with knife or fork
  21. remove skin of onions and prick them too
  22. pour oil in pan fry potatoes and onions
  23. fry for 7-9 minutes
  24. in mixture jar put roughly chopped tomatoes
  25. add onion
  26. add garlic
  27. add red chili powder
  28. corriander powder
  29. turmeric/haldi powder
  30. malai and grind them to paste
  31. now remove potatoes and onions from oil
  32. in same oil add tejpatta
  33. add cloves
  34. add cinnamon stick
  35. pour tomato grinded gravy
  36. cook till ghee leaves sides of pan
  37. add potatoes and onions
  38. cook for sometime
  39. add salt
  40. add kitchenking masala
  41. give a stir
  42. add cream
  43. check whether potatoes are cooked
  44. sprinkle some kasoori methi
  45. dum Aaloo pyaaj is ready
  46. process of mutter rice :
  47. in a pan add oil
  48. add mustard seeds
  49. add jeera
  50. add curry patta
  51. now add little turmeric powder
  52. add greenchilli
  53. add rice give a nice mix
  54. add boiled mutter/green peas
  55. add salt
  56. add lemon juice
  57. process of pakodi kadhi :
  58. in a big bowl take curd
  59. add gram flour/besan
  60. add salt
  61. whisk it and make lump free paste
  62. know add water and mix again
  63. keep for boiling for atleast 20-25 minutes
  64. boil on slow flame
  65. add greenchilli
  66. in other pan add ghee
  67. let it become hot
  68. add mustard seed
  69. add jeera
  70. as it crackle add curry patta leaves
  71. add this to kadhi
  72. boil again for 5minutes
  73. kadhi is cooked
  74. in a serving thali arrange kadhi in bowl
  75. curd in bowl
  76. dum Aaloo pyaaj in bowl
  77. Parathas
  78. haldi aachar
  79. rice in small plate
  80. kesar elaichi curd in bowl
