Ingredients Serving: 12

  1. 160 gm butter softened
  2. 100 gm chocolate chips
  3. 190 gm soft light brown sugar
  4. 2 Eggs
  5. 200 gm self raising flour
  6. 2 ripe bananas mashed
  7. Handful of walnuts chopped ( optional)
  8. 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 180 degree celsius. Grease a muffin pan or any other mould you prefer. (The batter makes 12-14 cakes depending on the size of mould you choose.)
  2. Cream the butter and sugar in a large bowl with an electric hand mixer until it is light and pale. Add one egg at a time, mixing after each addition, until well incorporated.
  3. Fold the flour, bananas, chocolate and vanilla extract into the mixture until you have a smooth batter. Add the walnuts. Divide the mixture equally using an ice-cream scoop and bake in the oven for 20-25 minutes.
  4. Insert a toothpick into the centre of one of the cakes, if it comes out clean, the cakes are ready.
  5. Remove from the oven and allow them to cool slightly before transferring onto the serving plates.
  6. Serve warm with hot salted caramel sauce drizzled on top.
