ABOUT Watermelon Ghazpacho RECIPE

Ghazpacho is Spanish cold soup which is made of fruits ,vegetables, and served cold. Its originated in the Southern Spain. There are many modern varieties of ghazpacho in different colour omitting tomatoes. Summer is full of fresh and juicy fruits like watermelon, oranges..I made my way of Spanish Cold soup with watermelon and orange.

Ingredients Serving: 2

  1. 2 heaped cups chopped seedless watermelon
  2. 2 full tbsp basil/ sabza seeds
  3. 1 medium sized tomato, chopped
  4. 1 small beetroot peeled and grated
  5. 1 fresh orange squeezed
  6. 1 tbsp extra virgin olive oil
  7. 1 tbsp lemon juice
  8. 1 handful mint leaves wash and chopped
  9. 1 tsp of apple cider vinegar
  10. Pinch of cayenne pepper/ sweet pepper
  11. Rock/ sea salt to taste
  12. 1/2 inch ginger, grated
  14. 1 English cucumber,peeled and chopped


  1. In a bowl soaked sabja/ basil seeds in water for 10-15 minutes
  2. Meanwhile,prepare to grind everything
  3. In blender add chopped water melon, Olive oil, lemon juice, orange juice, mint leaves, tomato and beetroot, ginger, vinegar, salt
  4. Grind it till smooth
  5. Seive it if needed
  6. Into empty glasses add soaked basil seeds .Pour the soup slowly over it.
  7. Garnish it with cucumber. Serve immediately or chilled.
