A very authentic and old dish which is served to lord jaggannath during rath yatra... I have learnt from my mom.

Ingredients Serving: 4

  1. basmati rice 2 cup
  2. Saffron 10-12 threads
  3. sugar 1 cup
  4. 1 tbsp ghee
  5. Cashews 2tbsp chopped
  6. Almonds 2 tbsp sliced
  7. Raisins 2tbsp
  8. Cardamom 4
  9. Cinnamon 1 stick
  10. Cloves 4
  11. Milk 1 tsp
  12. Water to cook rice

Instructions

  1. Wash rice 2 - 3 times nicely and leave them in a strain.
  2. Take a deep pan with a lid and put 1 tbsp ghee in it.
  3. When ghee gets warm add cloves, cinnamon, cardamom, cashew , almonds and raisins in pan and keep stirring till it turns golden.
  4. Now add strained rice in pan and keep stirring for 2-3 mins.
  5. Now add 4 cup water exactly double of rice and add saffron which was soaked in 1tsp milk earlier for 10 mins.
  6. When water start boiling close the lid and sim the flame. Let it cook for 10 mins.
  7. Now open the lid and see water is not left in pan and rice got dry .Now add 1 cup sugar and stir slowly and close the lid again for 5 mins.
  8. Traditional and very religious kesari chawal is ready... Serve it in a plate with fried cashew, almonds and raisins.
