Winter is the best season to binge on and relish the finger licking seasonal delicacies of this chilly weather. Jaggery or Gud is abundantly used in winter because of excessive iron & vitamin C and very healthy option in this season. Keeping in tune with the seasonal theme "Jai Ki Rasoi Se" has churned out "Gudwale Chawal"

Ingredients Serving: 8

  1. Rice (Chawal - 100 Grams
  2. Milk (Doodh) - ¼ Liter
  3. Pure Ghee - ¼ Cup
  4. Almonds (Badam) - 25 Grams
  5. Cashew Nuts (Kaaju) - 25 Grams
  6. Raisin (Khishmish) - 25 Grams
  7. Milk Solid (Mawa or Khoya) - 50 Grams
  8. Cardamom - ½ Tea Spoon
  9. Jaggery (Gud) - 100 Grams


  1. Wash and soak rice at least for 15 minutes before cooking
  2. Heat 2 table spoon of pure ghee in non-stick pan or kadai. Once it is hot add cashew nuts and finely chopped almonds. Cook till they become light brown. Remove and keep it aside
  3. In the same pan or kadai add milk and cook till it comes to boiling.
  4. Add soaked rice and mix well. Cover it, cook till the milk is observed & rice becomes soft or cooked properly.
  5. Now add the grated jaggery. Mix and cook till it gets completely melts
  6. Add milk solid, fried cashew nuts, almonds and remaining pure ghee. Mix all ingredients, cook on low flame till the rice becomes golden brown and ghee get separated from it
  7. Now the dish ready, garnish with fried cashew nuts & almond and serve it hot.
