ABOUT Mitthe chawl ( Meethe Chawal)(sweet rice) RECIPE

Basant Panchmi special of North .The Punjabis call it Mitthe chawl ie.Meethe chawal given the yellow color ,marking Basant ,by adding saffron strands .Its aromatic with use of Cinnamon & cloves saute in ghee.My Moms recipe!!

Ingredients Serving: 4

  1. 250 gms Basmati Rice
  2. 1 cup sugar
  3. 1tblspn pure ghee
  4. 1-2 cinnamon sticks
  5. 5-6 cloves
  6. Chopped Almonds
  7. Some Raisins
  8. A pinch or few strands of Saffron

Instructions

  1. Wash soak rice for five minutes and put to boil
  2. Strain to get separate rice grains well apart
  3. Stir in the pure ghee in rice while hot and strained
  4. Prepare the Sugar syrup now
  5. To 2 glasses Water add sugar, add cinnamon stick, cloves, almonds and saffron threads
  6. Bring to one thread consistency stirring and Cool a little
  7. Now quickly mix lightly the Rice into this sugar mix
  8. Heat only when serving again, mix lightly
  9. Mix and heat well in micro before serving
  10. Serve hot
