Ingredients Serving: 4

  1. Carrots-1 kg (grated)
  2. Milk-2 litres
  3. Khoya-150gms
  4. Sugar-1 cup
  5. Ghee-2tbsp
  6. For Garnishing:
  7. Cashew nuts-5 to 6 (halved)
  8. Almonds-5 to 6 (sliced)
  9. Cardamom powder-1 pinch

Instructions

  1. Boil milk in a deep bottomed pan.
  2. Stir at short intervals to prevent it from sticking. Boil for about 45-50 minutes till the milk thickens.
  3. Once the milk looks thick and is creamy, add the grated carrots and cook till the milk is absorbed completely.
  4. It will ideally take more than 45-50 minutes for the milk to be absorbed by the carrot. Stir frequently.
  5. Once the milk is absorbed, turn off the flame and keep the pan aside.
  6. Heat ghee in another deep bottomed pan. Add the carrots and mix well. Cook for 10-15 minutes on a low flame and then add khoya and sugar. Cook on a low flame for 15-20 minutes.
  7. Stir till the sugar is dissolved. Once done, put the pan on the flame.
  8. Gajar ka halwa with khoya is ready to eat.
