Ingredients Serving: 4

  1. Chicken 1 kg
  2. Rice kaima 1kg
  3. Onion
  4. Tomato
  5. Green chilli
  6. Mint leaves
  7. Coriander leaves
  8. Lemon juice
  9. Curd
  10. Pepper powder
  11. Chilli powder kashmiri
  12. Turmeric Powder
  13. Coriander Powder
  14. Garam Masala
  15. oil
  16. ghee
  17. Cashews
  18. RAISINS
  19. Cardomon
  20. star anise
  21. Cloves
  22. cinnamon
  23. Cumin
  24. Maida dough for dum

Instructions

  1. Heat 1/4 cup coconut oil in a pan...roast 10 to 15 cashew nuts and 2 teaspoons raisins and 3 sliced onions separatly.. Fry the onions till golden brown color..this fried onion is used for marination
  2. Chicken marination Chicken 1kg Ginger garlic paste 3/4th of fried onion Chopped chilli 4 Turmeric powder 1/2teaspoon Coriander powder 1 tspoon Kashmiri Chilli powder 1 tspn Pepper powder 1tspoon Garam masala hlf tspoon Lemon juice 1 tblspn Curd half cup Coriander and mint leaves Salt Tomato 2 Mix all the incrdnts in a pot and marinate for atleast an hour
  3. To make rice Heat 2 tblspoon ghee and 2tblspn coconut oil in a larger pan Add spices (Cardomon cinnamon pepper cloves cumin star anise) and saute it well To this add 1 onion sliced and saute till soft Then add 2 cups of soaked rice (kaima) saute for 3 -4 minutes and add 3.5 cups of water and add salt Cook the rice in medium flame till all water is evapourated Rice should not be fully cooked
  4. Dum Add the hot rice over the marinated chicken Add roasted cashews raisins onion mints leaves and coriander leaves on the top of rice Sprinkle garam masala also Pour 2teaspoon of ghee over this Make dough of all purpose flour Place it alla round the edges of the pot Cover with lid place coal over it Cook on low flame for 10 to 15 minutes Open the lid after an hour
