Ingredients Serving: 4

  1. For Paneer tikki:
  2. Paneer- 150 gm
  3. Garlic paste- 1/4 tsp
  4. Red chilly sauce- 1 tsp
  5. Tomato ketchup- 1/2 tsp
  6. Cumin powder- 1/4 tsp
  7. Red chilly powder- 1/2 tsp
  8. Corn flour- 2 tbsp
  9. Water- as per need
  10. Semolina- 1/2 cup
  11. Raw mango- 1 (finely crushed)
  12. For chaat:
  13. Mango purée- 2 cup
  14. Sugar- 1/2 cup
  15. Red chilly powder- 1/2 tsp
  16. Pomegranate seeds- 1/2 cup
  17. salt- a pinch
  18. For chaat bowl:
  19. Maida or plain flour- 1 cup
  20. Ghee or oil- 2 tbsp
  21. Water- for kneading
  22. For Garnishing:
  23. Onion- 1 medium sized (finely chopped)
  24. Tomato- 1 (finely chopped)
  25. Chat masala
  26. Sev
  27. Coriander leaves

Instructions

  1. For paneer tikki: Cut paneer in round shape and soak it in the water for 15 minutes. Drain it.
  2. Marinate paneer with garlic paste, red chilly sauce, cumin powder, tomato ketchup, salt & red chilly powder. Mix it well. Leave it for 20 minutes.
  3. In another bowl add corn flour, crushed raw mango, water & semolina. Mix a medium thick paste.
  4. Heat oil in a karahi.
  5. Now dip paneer in this batter and fry them until golden brown.
  6. In another bowl add mango purée, pomegranate seeds, sugar, salt & red chilly powder. Mix well. Keep it in the refrigerator.
  7. To make a bowl, add maida or plain flour, salt & oil/ghee. Rub it as much as you can. So the bowls will be more crispy.
  8. Now using enough water knead a soft dough.
  9. Take small portion. Using rolling pin make a flat round shape roti.
  10. Take a small steel bowl. Place it on a flat shaped roti.
  11. Now cover it from all sides. Cut extra wedges.
  12. Now deep fry them until that steel bowl will separate by itself. Fry it till light golden.
  13. Let it be cool.
  14. Now take a bowl. Place a paneer mango tikki on it. Pour some mango chaat. Garnish it with sev and coriander leaves.
