Ghee Rice Kerala Style

Ingredients to make Ghee Rice Kerala Style

  • Basmati rice/any thin kolam rice 2 cups
  • ghee 3 tablespoon
  • onion sliced 1 cup
  • onion chopped 1 cup
  • carrot 1/2 cup chopped into long pieces
  • ginger paste 1 tablespoon
  • Boiling water 3 cups
  • bay leaf 2
  • cloves 4
  • cardamom 3
  • cinnamon 1 inch piece 3
  • Oil/ghee 3 tablespoons for frying
  • cashews a few
  • raisins a few
  • coriander leaves a small bunch
  • salt to taste

How to make Ghee Rice Kerala Style

  1. Heat a pressure cooker and add 3 tablespoons of ghee
  2. Add the bay leaf, cinnamon, cardamom, and cloves and fry for a minute
  3. Add the ginger paste and fry until the raw smell goes.
  4. Add the chopped onion and fry until translucent
  5. Add the 2 cups rice and fry for a minute or two
  6. Add 3 cups boiling water to the rice
  7. Add a little coriander leaves and carrot and give it a mix
  8. Add salt and mix well.
  9. Pressure cook for 2 whistles.
  10. In a fry pan add 3 tablespoons ghee/oil.
  11. Fry the cashews and raisins until golden brown colour and keep aside
  12. In the same oil fry the sliced onion until golden brown colour and keep aside
  13. After the pressure releases add coriander leaves, cashews, raisins, fried onion and give it a gentle mix
  14. Ghee rice is ready.
  15. Can be served with raita and boiled egg.
