Ingredients Serving: 4

  1. For paneer tikka marination: 1 cup thick hung curd or yougurt
  2. 1 tbsp roasted gram flour
  3. 1 tbsp mustard oil
  4. 1/2 tbsp ginger garlic paste
  5. 1 tsp cumin powder
  6. 1 tsp Coriander powder
  7. 1 tsp garam masala powder
  8. 1/2 tsp amchur powder
  9. 1/2 tsp Chaat masala powder
  10. 1 tsp kashmiri red chilli powder
  11. Black /Rock/Regular salt to taste
  12. 1 tsp Lemon juice
  13. 1/2 tsp turmeric powder
  14. 250 gm. Paneer
  15. 1 green capsicum cut in cubes
  16. 1 red bell paper cut in cubes
  17. 1 seedless tomato cut in cubes
  18. For green chutney
  19. 1 cup green coriander leaves wash and chopped
  20. 1 /2 cup mint leaves washed
  21. 1 green chilli
  22. 1 inch ginger wash and chopped
  23. 1 raw mango peel and chopped
  24. 2 cloves garlic
  25. 1/2 tsp black pepper powder
  26. black salt to taste
  27. 1 tsp cumin powder
  28. Water as needed
  29. For dough
  30. 1 cup Wheat Flour
  31. 1 tsp Salt
  32. 1 tbsp oil
  33. Water as needed
  34. Oil/ghee for roasting rolls
  35. For veggies and salad dressing in rolls
  36. 1/4 cup shredded cabbage
  37. 1/4 cup shredded carrots
  38. 1 onion cut in thinly slices
  39. 1 tsp chaat masala
  40. 1/2 tsp kasmiri red chilli power
  41. Salt to taste

Instructions

  1. For paneer tikka marination
  2. Take all Ingredients
  3. In a mixing bowl add curd, roasted gramflour, all spices, mustard oil, Ginger garlic chilli paste. Except paneer and veggies
  4. Adjust taste of spices and salt. Now add paneer and veggies carefully . Mix gently with hands. And keep it in fridge for set marination over veggies and paneer for atleast 30 minutes.
  5. Meanwhile we work on salad, chutney, and dough
  6. For chutney Take all Ingredients in jar as above mentioned. Add little water. Grind it till smooth paste. Adjust salt and lemon
  7. For salad dressing In a bowl add thinly sliced onion, shredded cabbage, shredded carrot, sprinkle lemon juice, chaat masala,and salt as pet taste mix well..
  8. For dough In a bowl add flour ,salt, oil/ghee mix well add water as needed and mix everything and knead it . Add water if required. Make a soft chapati dough. Cover it with damp cloth and keep it aside for 10 minutes.
  9. After 10 minutes. Knead the dough again with little oil or ghee in your palm.. Divide the dough in to small equal size chapati balls. dust the dough with some flour. roll it with help of rolling pin. Roti should be thick not thin. Place the roti on hot tawa. Cook the base flip it and spread some oil and flip again .Semi half cook the roti for rolls. Make all chapati like this..
  10. Heat a oven at 180' C. Add marinated paneer and veggies in skewers or barbeque sticks.
  11. Grill these tikka sticks in a oven for 10 minutes and change the sides again grill it for 10 minutes. When all tikka done keep it out from oven.
  12. Assembling and making kathi roll.. take one roti. Spread mint coriander chutney over it. Now place paneer tikka cubes in centre. Remove the sticks. Top with veggies salad and roll it like wrap.
  13. Heat a non stick tawa. add little butter or ghee . Shallow fry these kathi rolls. And cut it half. .
  14. Serve hot with green chutney..
