The speciality of this cake is that i baked ds cake fa my moms bday n she absolutely loved it!! Ingredients to make Eggless Choco vanilla double layer cake

  • Cake 1: vanilla cake
  • all purpose flour 1 n hlf cup
  • baking soda 1/2tsp
  • Baking powder 1tsp
  • sugar 3/4th cup
  • curd 1 cup
  • oil 1/2 cup
  • Vanilla extract 1 tsp
  • Cake 2: Chocolate cake
  • 1 n hlf cup all purpose flour
  • salt a pinch
  • sugar 1 cup
  • Cocoa powder 3 tbsp
  • oil 1/4 cup
  • Brewed coffee 1 cup(i made it with 3 tsp of cofee powder with one cup of water)
  • baking soda 1 Tsp
  • Vanilla extract 1 tsp
  • 1 tbsp vinegar( white or apple cider vinegar)
  • Icing
  • butter 1tbsp(can be replaced with cream too)
  • Milk 2 n hlf tbsp
  • White chocolate 2 to 3 oz(adjust accordingly to yr desired consistency)
  • cream hlf cup
  • Dark chocolate 6 to 7 oz(adjust accordingly to yr desired consistency)
  • Some cake sprinklers

How to make Eggless Choco vanilla double layer cake

  1. Cake 1 preparation: Arrange the baking mould by applying a bit of oil r butter to it and the put in the parchment/baking paper onto it. Now smear a bit of oil onto the paper too and dust the paper and the sides of the mould with the flour and oil.
  2. Sieve the maida atleast 5 times. Sieving the flour is vry imp as it gives the lightness to the cake.
  3. Now take the curd in another bowl and add sugar to it and mix it untill it dissolves. U need not mix it untill it is completely corporated. Now add in the baking powder and baking soda to it. Mix well Leave the mixture idle for 5 min so tht it starts to bubble.
  4. After 5 min add in the oil and vanilla extract. Give it a fine mix.
  5. Preheat the oven at 180°
  6. Now add the flour to the wet mixture and just corporate it. Tht is just fold it untill the flour is nicely mixed with it. Dont over fold it. Itz k if tr are tiny amount of lumps in the batter.
  7. Pour it into the mould and after the oven is preheated bake it for around 30 to 35 min.
  8. Cool the cake completely on a rack or cn b just cooled completely and transferred to a plate.
  9. Cake 2: Repeat the parchment paper process.
  10. Sieve the flour cocoa powder baking soda salt atleast 5 times. Again seiveing is a vry imp step
  11. Now in a bowl add the brewed cofee vinegar oil vanilla extract and mix well
  12. Preheat the oven at 180°
  13. Pour the wet ingredients to the dry ingredients and fold r mix well. Donot over mix it
  14. Pour it into the mould and bake it for 30 to 35 min. Repeat the cake test.
  15. Cool it completely.
  16. Incing:
  17. Add about 1 tbsp of butter and 2and hlf tbsp of milk to a pan. Heat it together.
  18. Pour it on about 2 oz of white chocolate and mix well.
  19. Place one cake. I placed the vanilla first. Ice the white chocolate onto it generously.
  20. Heat the cream until one boil. Pour it on the dark chocolate.mix well
  21. Place another cake on the first cake and apply the chocolate icing generously.
  22. Smear the white chocolate ganache and sprinkle some cake toppings. . This step is completely optional n cn b omitted.
  23. Refrigerate it for about 3 to 2hrs. I kept it overnight and njoy the yummy desert :yum:

My Tip:

Brewed cofee in the chocolate cake can be replaced by 1 cup of milk which is at room temperature.
