Ingredients Serving: 4

  1. Urad daal 200 gm
  2. Water 3 Cups
  3. Salt 2 tbspn
  4. Curd 500 gm
  5. sugar 1 cup
  6. Tamarind paste 1 cup
  7. Dry roasted jeera powder 1 tbspn
  8. Chaat masala 2 tspn
  9. Red chilli powder 2 tspn
  10. Coriander leaves for garnishing
  11. pomegranate for garnishing
  12. Chopped green chilli for garnishing
  13. Bhujiya sev for garnishing
  14. Vegetable oil for deep frying


  1. Soak urad daal in 1 1/2 cup of water and leave overnight
  2. In a mixer grinder grind urad daal to a fine paste with very less water
  3. Add a pinch of salt to the paste and beat well and keep aside
  4. Make sweet tamarind chutney by heating together tamarind pulp and 3/4th cup sugar
  5. Bring it to a boil and keep on simmer till it reaches thick consistency
  6. Finish by adding half of the dry roasted jeera powder
  7. Beat curd with 1/2 tbspn salt and 1/2 tbspn sugar till smooth
  8. Heat vegetable oil in deep vessel for deep frying
  9. Wet your palm and take medium ball of the urad daal paste n slide it into oil
  10. Fry on medium heat till golden brown and crisp
  11. In a cup of warm water add 1/2 tbspn of salt
  12. Take out wadas from oil and dip in salted water for 10 seconds
  13. Repeat the same with the rest of the urad daal
  14. For serving one person, keep 3-4 wadas in a serving plate
  15. Cover them with the beaten curd
  16. Pour a spoonful of tamarind chutney
  17. Sprinkle a pinch each of roasted jeera powder and red chilli powder
  18. Garnish with coriander leaves, pomegranate, chopped green chillies and bhujiya sev and serve
