ABOUT Brinjal Rice RECIPE

A finger-licking rice, mixed with spicy brinjal masala, a quick mixed rice for your lunch box

Ingredients Serving: 2

  1. 2 cups cooked rice
  2. 5-6 Brinjals
  3. 1 medium onion
  4. 1 medium tomatoes
  5. 2-3 tbsp oil
  6. Curry leaves a few
  7. Salt to taste
  8. 1 tsp shredded ginger
  9. Fresh Coriander for garnishing
  10. Roast n Grind
  11. 2 tbsp Chana Dal/Gram Dal
  12. 1 tbsp Coriander Seeds
  13. 1 tbsp Skinned Peanuts
  14. 1 tbsp fresh grated coconut
  15. 5-6 Red Chillies
  16. marble-sized tamarind

Instructions

  1. Dry Roast the ingredients under Roast n Grind, except tamarind and coconut. Grind the roasted ingredients along with tamarind and coconut Coarsely.
  2. Remove the stem of the brinjals and slice them lengthwise.
  3. Heat oil in a Non-stick Pan, Splutter mustard seeds, add hing and Curry leaves.
  4. Add onions and saute until translucent, next add tomatoes, add 1/4 cup water and let Tomatoes Cook and become soft and ooze oil.
  5. Next add Brinjals, Mix well.Cover and cook in a low flame for 10 minutes.
  6. When the Brinjals are half-cooked, add the grounded masala powder and salt to it.Mix well.
  7. Cover and Cook in a Simmer flame until done, takes about 8-10 minutes.
  8. Take it off the stove, Add the Cooked Rice and mix well. Garnish with Coriander leaves and shredded ginger. Serve Warm with Spiced Yogurt.
