Sindhi Style potato and bhindi curry, with extra spices to be served with rotis.

Ingredients Serving: 2

  1. 250 gms bhindi chopped
  2. 2 big potatoes chopped
  3. 2 to 3 tbsp or as required oil for frying
  4. 3/4 tsp or to taste salt
  5. 1/4 tsp turmeric powder
  6. 1/4 tsp jeera powder (optional)
  7. 1/2 tsp coriander powder
  8. 1/2 tsp garam masala
  9. 1/2 tsp red chilli powder (can increase if u want more spice)
  10. 1/4 tsp hing
  11. 1/4 tsp aamchur
  12. 2 bowls wheat flour
  13. 1 tbsp oil for moyan
  14. 2 glass or as required water to make dough


  1. Process for making Veg... Keep oil for frying in a kadai
  2. When oil gets heated add potato in it and mix it once. Keep it on medium flame
  3. When you see potatoes are now half cooked that time add bhindi and mix it well and cover it.. keep it on medium flame
  4. After few minutes check the veggie is cooked or not.
  5. If uncooked than keep it for more as required. If cooked and drain out extra oil if exists
  6. Now add all spices mentioned above and mix well. Mix well and cover it keep it on medium flame for a minute and off the flame.
  7. Your fried sabji is ready.
  8. For Roti.... Ate me moyan dale and with water achese gunth le
  9. Cover the dough with oil
  10. Cover the dough and keep aside for 10 to 15 minutes atleast to make soft and airy rotis.
  11. Now give shape for roti with rolling pin
  12. Cook it on gas.. spread ghee on it.. its ready serve it hot
