Maani is a spicy and tangy dish is a specialty of Himachal . Pairs very well with simple dal chawal .

Ingredients Serving: 8

  1. 1/2 kg kaddu - peeled and diced in to big chunks
  2. 1/2 tsp- Jeera
  3. 1/2 tsp- Saunf
  4. 1/4th -Dhaniya seeds
  5. 1/4th tsp- Methi dana
  6. 1/2 tsp-Heeng( asafoetida )
  7. 1 and 1/2 tsp - Salt
  8. 1/2 tsp- red chilli powder
  9. 1/2 tsp- haldi
  10. 1/2 tsp-Deggi mirch
  11. Lemon sized ball of tamarind soaked in water
  12. 1 tbsp- Besan dissolved in 1/2 katori water .
  13. 2 to 3 - dried red chillies


  1. Heat oil in a kadai and add dried red chillies , jeera , saunf, dhaniya seeds and methi dana.
  2. Once these turn dark brown add deggi mirch, red chilli powder powder, heeng and haldi .
  3. Now add diced kaddu, salt , and around 1/2cup of water .
  4. Mix well cover the kadahi and turn the flame on medium .
  5. Keep stirring in between and cook till it becomes tender . It should not become too mushy .
  6. Now add tamarind extract and the besan dissolved in water .
  7. Put flame on high now , mix well and let the gravy thicken a bit .
  8. Put the flame off and serve with dal chawal . Goes best with Chana dal or urad dal with rice .
