ABOUT Rajasthani Kadhi RECIPE

Ingredients Serving: 2

  1. 1 cup Sour Yogurt
  2. 2 cups Water
  3. 1 1/2 cup Gram Flour
  4. 1/4 cup Coriander leaves chopped
  5. 1-2 Dried red chillies
  6. 1 Bay leaf
  7. 1 1/2 tsp Cumin seeds
  8. 1/2 tsp Turmeric powder
  9. 1/2 tsp Mustard seeds
  10. 1/2 tsp Red chili powder
  11. 1/2 tsp of Asafoetida/Hing
  12. 1/4 tsp Fenugreek seeds
  13. Oil for frying and tempering
  14. Salt to taste

Instructions

  1. Mix 1 cup gram flour,coriander leaves, 1/2 tsp turmeric powder, pinch of baking soda and 1 tsp cumin seeds in a bowl with 4-5 tbsp of water.
  2. Heat the oil in a pan, and drop spoonful of the batter into it.
  3. Fry at medium flame till golden brown and drain on an paper towel.
  4. Mix water, yoghurt, gram flour, turmeric and salt in a pan. Stir till smooth and no lumps are left.
  5. Mix well, and cook for 7-8 mins till gram flour is well cooked or the gravy's consistency becomes little thick.
  6. Keep it aside and covered.
  7. Heat oil in a small pan then add mustard seeds and bay leaves.
  8. When the mustard seeds starts popping , add cumin seeds and fenugreek seeds.
  9. Add red chillies followed by asafoetida. Fry for few seconds till chillies turns darker in colour.
  10. Remove the pan from heat, then add red chilli powder. Immediately pour the tempering over the kadhi.
  11. Serve hot with cumin rice.
