Ingredients to make Alu baingan

  • Medium brinjals-250 gms
  • potatoes-250 gms
  • oil-2 tbsp
  • cumin Seeds-1 tsp
  • asafoetida-1/4 tsp
  • turmeric-1/4 tsp
  • coriander cumin powder-2 tsp
  • red chilli powder-1 tsp
  • fennel seed powder-1 tsp
  • Aamchur-1/2 tsp
  • salt
  • coriander for garnishing

How to make Alu baingan

  1. Cut brinjals and potatoes lengthwise like finger chips.
  2. Take oil in a pan.Add cumin seeds and asafoetida.
  3. Now add the potato and brinjal slices.
  4. Add salt and mix.Cover and cook for 5 minutes.
  5. Stir once and again cook for 2 to 3 minutes.Open lid and check whether potatoes are cooked.
  6. Add all spices like turmeric,chilli powder,coriander powder,fennel seeds powder and amchur.
  7. Mix properly andcook for a minute.
  8. Garnish with coriander and serve with hot fulkas.
