Ingredients Serving: 4

  1. Bitter gourd 250 grms
  2. Gram flour 2 tablespoon
  3. Corn flour 1 tablespoon
  4. Cumin seeds 1 teaspoon
  5. Fenugreek Seeds 1 teaspoon
  6. Thick fennel 1 teaspoon
  7. Red chilly pwoder 1 teaspoon
  8. Chat masala pwoder 1 tablespoon
  9. Black musturd seeds 1/2 teaspoon
  10. Asafetida pwoder 2 pinch
  11. honey 2 tablespoon
  12. salt as per taste
  13. Oil 2 cups
  14. Karela masala 2 tablespoon
  15. White sasame seeds 1/2 teaspoon
  16. Onion 2 piece
  17. Chopped ginger 1 teaspoon
  18. Chopped Green chilli 1 teaspoon
  19. Dry mango pwoder 1 teaspoon

Instructions

  1. Cut the bitter gourd in disc(round) shapes and sprinkle salt on those pieces.
  2. Keep the cut pieces aside for two hours.
  3. After two hours throughly wash the pieces with water.
  4. Now coat these pieces with gram flour and corn flour.
  5. Heat the oil in the pan and fry the coated pieces in it.
  6. If it appears that their colour has been changed to light golden,take out the chips and soak the excess of oil with a tissue paper.
  7. Cut an onion in rings.
  8. Heat two table spoon oil in a pan and put cumin seeds,black mustard seeds,asafoedita powder,fennel,and fenugreek seeds in it.
  9. Now put chopped green chillies,chopped ginger,and rings of onion in oil and fry.
  10. Add fried chips of bitter gourd along with chat masala,karela masala,dry mango powder,red chilly powder and salt in the pan.Mix throughly.
  11. Lastly add two table spoons of honey and mix.Let them be fried for few minutes.
  12. After being cooked take the waffers out in a serving bowl and garnish with sesame seeds.
  13. Recipe for Karela masala:- Dry roast 4 tbsp whole coriander seeds,2 tbsp thick fennel seeds,1 tbsp cumin seeds,and half tbsp fenugreek seeds.Grind them in a mixer and make powder.Use this masala in any stuffed dish like brinjal,lady finger,gentleman's toes,green patatoes,and bittergourd.
