ABOUT Bhutay Ko Karela (Nepali Style) RECIPE

Bhutay ko karela or fried bittergourd vegetable is a nepalese dish which is usually had with dal bhaat (dal rice) in the nepalese households. This spicy aromatic dish not only serves as a side dish but also as a condiment with the meals.

Ingredients Serving: 4

  1. 500 grams bittergourd
  2. 2 sliced onions
  3. 1 big sliced tomatoes
  4. 10 sliced garlic cloves
  5. 1 ladle mustard oil
  6. Salt to taste
  7. 1 teaspoon red chilli powder
  8. 1/2 teaspoon Turmeric powder
  9. 1 teaspoon coriander powder
  10. 1/2 teaspoon amchur powder
  11. 1/2 teaspoon cumin
  12. 1/4 mustard seeds
  13. 1/2 teaspoon lime juice depending on your sour tooth.

Instructions

  1. Wash, slice the bittergourd and rub salt all over them and keep it in the sun for half an hour.
  2. After half an hour wash the bittergourd, again and keep aside.
  3. Take a wok, heat oil, splutter mustard seeds, jeera, and saute the crushed garlic cloves.
  4. Once the garlic turns brown, add the bittergourd slices and let them cook for about 10-20 minutes till they turn slightly brown and are not raw. Remember not to cover the wok as this will infuse the bitter taste in the bittergourd.
  5. Once browned add the sliced onions and fry till onions turn golden brown and translucent.
  6. Now add tomatoes and fry again for a minute or two.
  7. Now add the remaining spices and fry. Adjust the salt and lastly add line juice depending upon your taste.
  8. Serve with rice and dal. Enjoy!
