Ingredients Serving: 2

  1. Baingan - 1big size
  2. Spinach/palak - 250 gms
  3. Potato - 1
  4. Radish - 1
  5. Chopped onion - 1
  6. Garlic cloves chopped - 2 - 3
  7. Badhi - 5 - 6
  8. Ginger - 1 inch stick
  9. Chopped green chilly - 2
  10. Salt - to taste
  11. Turmeric powder - 1/4 tsp
  12. Cumin seeds - a pinch
  13. Oil - 2 tbsp

Instructions

  1. Wash and chop spinach
  2. Also wash and chop bringal ,potato and radish into small pieces
  3. Blanch all the veggies.
  4. Heat oil in a pan and stir fry the badhi
  5. Stain in a paper napkin.
  6. Heat oil in a pan add cumin seeds to crackle.
  7. Add onion and saute until golden in color.
  8. Add ginger,garlic, green chilly and turmeric powder n saute for one mins.
  9. Add blanched veggies,badhi and salt and mix well.
  10. Serve with chapatis or rice.
