Baingan ka kharta has so many variations, depending upon the regions, so here is another spicy variety of the same.

Ingredients Serving: 2

  1. Bharta baingan - 1 large
  2. Tomato - 1
  3. Chopped onion - 1
  4. Chopped green chilly - 2 - 3
  5. Chopped garlic cloves - 3 - 4
  6. Chopped coriander leaves - 1 tbsp
  7. Salt - to taste
  8. Mustard oil - 2 tbsp

Instructions

  1. Wash and clean the bringal.
  2. Apply some oil in the skin of the bringal and tomato.
  3. Stalk trimmed and partially slit into quarters and prick the bringal
  4. Now keep in the microwave safe bowl.
  5. Microwave baingan for six mins and tomato for three mins for high.
  6. Once cooled,remove the skin of the baingan and tomato and mash it.
  7. Heat oil in a pan.
  8. Fry onion till light brown,add green chily,garlic cloves and coriander leaves and m ix well.
  9. Add mashed baingan,tomato and salt and mix well
  10. Serve hot.
