Vegetarian red parsi flavoured curry

Ingredients Serving: 4

  1. Coconut milk 100ml
  2. Orange pumpkin 350g
  3. Sesame seeds 1 tsp
  4. Cumin 1 tsp
  5. Dhania powder 1 tsp
  6. Peanuts 50g
  7. Cashews 25g
  8. Garlic Cloves 5
  9. Kashmiri mirch dry 3
  10. Tomatoes chopped 3/4 cup
  11. Khus khus 1 tsp
  12. Plain flour 2 tsp
  13. oil 2 tbsp
  14. Turmeric powder 1 tsp
  15. Red chilli powder 1 tsp
  16. Salt to taste
  17. For curry powder:
  18. Coriander powder 2tsp
  19. Turmeric 1tsp
  20. Cumin 3/4tsp
  21. Black pepper 1/4tsp
  22. Red chilli powder 1/4tsp
  23. Elaichi powder 1/4tsp
  24. Cinnamon powder 1 pinch
  25. Cloves 2

Instructions

  1. Cut pumpkin into small cubes and put in bowl of water immediately. Take a trickle of oil in a pan and add this water with pumpkin. Close lid and Cook on low heat for 5-7 mins
  2. In the meanwhile, combine all ingredients marked under curry powder in a grinder for a fine powder
  3. Roast 1 tsp sesame seeds, 1 tsp cumin, 1 tsp coriander powder, cashews, peanuts, dry kashmiri mirch, and 1 tsp khus khus on low flame till aromatic. Keep aside
  4. Take chopped tomatoes, garlic, coconut milk in a bowl. Add the curry powder we made to this with some water.
  5. In a nonstick, take oil and add flour to it. Mix well till smooth. Add turmeric and red chilli powder
  6. Add the tomato mixture and Cook on low heat for 15 mins till oil separates.
  7. Add the pumpkin and mix well
  8. Garnish with cream, cashews and coriander
