A healthy easy to make dish with yellow pumpkin which goes very well with rice, roti.. Tastes best when eaten alone. Combination onf mehthi & peanuts along with pumpkin makes the dish more tasty & healthy.. Loaded with antioxidants..& vit c.. Iron... Grated coconut adds the final taste...

Ingredients Serving: 4

  1. Yellow pumpkin - 1 cup
  2. Methi leaves - 1/2 cup
  3. Roasted peanuts - 5 tbsp
  4. Onion - 1 [chopped]
  5. Grated coconut - 1/4 th cup
  6. Red & green chilly - 4
  7. Mustard seeds -1 tsp
  8. Jeera [cumin seeds] - 1 tsp
  9. Oil, Salt

Instructions

  1. Cut yellow pumpkin into small square pieces & cook separately..
  2. Cut mehthi, onion 's, garlicinto small pieces.
  3. In a kadai add a spoon of oil & season with mustard seeds, jeera, roasted peanuts
  4. Add cut onions & fry till onions become soft
  5. Add garlic pieces fry for few minutes & then add cut mehthi leaves.. Mix well.. Little Salt can be added now.
  6. When cooked add Boiled yellow pumpkin, little salt & mix well..
  7. Last add grated coconut...
