Kaddu ki sabji (Pumpkin sabji)

Ingredients to make Kaddu ki sabji (Pumpkin sabji)

  • pumpkin- 500 gms
  • onion- 1 big
  • oil- 1 tbsp
  • cumin Seeds- 1 tsp
  • asafoetida- 1 pinch
  • fenugreek seeds- 8 to 10
  • salt as per taste
  • turmeric- 1/2 tsp
  • Coriander cumin powder- 1 tbsp
  • red chilli powder- 1 tsp
  • Amchoor- 1 tsp
  • coriander for garnishing

How to make Kaddu ki sabji (Pumpkin sabji)

  1. Chop pumpkin into medium size pieces.
  2. Take oil in a pan and add cumin seeds.
  3. Now add methi dana and asafoetida.
  4. Then add chopped onions and saute till they become translucent.
  5. Add pumpkin pieces and cover. Let it cook for 5 minutes
  6. When pumpkin becomes soft, add the spices and salt.
  7. Mix properly and let cook for a minute. Then put off flame.
  8. Garnish with coriander.
  9. Serve hot with rotis.

My Tip:

Do not overcook or the vegetable will become mushy.
