Ingredients to make Besan spicy sev

  • 3 cups gram flour / besan
  • 1/2 tsp turmeric powder
  • 1/2 red chilli powder
  • 1/2 cumin powder
  • Pinch hing
  • 1/2 black pepper
  • 1 tsp garlic paste
  • 1/2 ajwain
  • 1 tsp salt according to taste
  • 1/2 cup water
  • oil for frying

How to make Besan spicy sev

  1. Seive the besan very well. Add turmeric powder, chilli powder, cumin powder, black pepper, hing, garlic paste, ajwain along with salt. Mix well.
  2. Knead dough using 1/2 cup water. Add water gradually and mix well.
  3. Add one tbsp water extra and once again knead for two minutes.
  4. Meanwhile heat the oil in kadhai for frying.
  5. Sev maker contains disks having different shapes. Use the disk having small size holes for making this sev.
  6. Grease the all parts of the sev maker and disk using oil.
  7. Fill the sev maker tightly using perpared dough.
  8. Close the sev maker. As you twist the handle sev will come out from the bottom holes.
  9. Check the oil, it should be enough hot for frying. Drop a pinch of dough in the oil.
  10. If it comes on the top after two seconds then oil is ready to fry.
  11. Hold the sev maker over pan ,turn the handle and thin sev will come out.
  12. Slowly rotate the sev maker in circular motion as you complete one or two circle turn the handle in reverse direction.
  13. Fry the sev from both the side till it becomes crisp. Take out sev using slotted spoon, so access oil will be drained into kadhai only.
  14. Same way prepare sev. Stack the circle of sev. When they will get cool down softly break them using your hands, store it in to air tight container.
  15. Self life of this sev is around 10 to 12 days.
