ABOUT Rice tikki(Vegetable rice cutlets) RECIPE

The word "tikki" means small cutlet or croquette in Hindi, Marathi, and Tamil. They can be made with potatoes, also called aloo tikki or as I am showing here with rice. It is served hot and warm along with sauces, and sometimes yogurt or chick peas. This vegetable dish is crispy on the outside, soft on the inside and overall very tasty.

Ingredients Serving: 3

  1. - One cup of cooked rice or left over rice
  2. - One boiled and mashed potato
  3. - One grated carrot
  4. - One finely chopped onion
  5. - One teaspoon of red chilli powder
  6. - One teaspoon of coriander powder
  7. - Salt as per your taste
  8. - One teaspoon of ginger garlic paste
  9. - Half a teaspoon of lime juice
  10. - Half a cup of bread crumbs
  11. - One tablespoon of corn flour

Instructions

  1. -First step is to boil the potatoes and mash them.Grate the carrot and chop the onion
  2. - Cook the rice by adding little more water so that it will be softer and you can easily smash it later
  3. - Take a mixing bowl and add one cup of cooked rice to it.Smash by using spoon or your hands
  4. - Add the grated carrot to cooked rice.
  5. - Add boiled smashed potatoes and one finely chopped onion
  6. - Add a teaspoon of red chilli powder,2 teaspoons of coriander powder,salt as per taste and a teaspoon of ginger garlic paste
  7. - Mix everything so that all spices are coated with the vegetables and rice
  8. - Finally add half cup of bread crumbs,One tablespoon of corn flour and mix everything.Gather everything to form the dough
  9. - Now take small portions,flatten them using your fingers and make small patties
  10. - Heat the skillet and place patties on it.Add few drops of oil around each pattie and cook them until the bottom side turns little brown.
  11. - Once the bottom side turns brown,flip and cook the other side
  12. - Serve rice tikkis with tomato sauce.
