Ingredients Serving: 4

  1. For Crust: white rice flour 1 cup
  2. Sweet rice flour 1/4 cup
  3. Salt 1/2 tsp
  4. Butter 1 stick (1/2 cup)
  5. Sugar 1/3 cup
  6. Vanilla essence 1 tsp
  7. For Filling: Avocados 2
  8. Maple syrup 6 tbsp
  9. Lemon juice 1 tbsp
  10. Orange blossom water 1/2 tsp
  11. Salt 1/8 tsp
  12. Unsalted pistachios 2 tbsp

Instructions

  1. TART SHELL: Cream together butter, sugar and vanilla essence.
  2. Add dry ingredients and mix. It will be crumbly. Mix until a dough forms.
  3. Turn dough into tart pan. Press down evenly. Prick the dough all over with a fork.
  4. Cover the prepared shells with plastic wrap and chill for 2 hrs.
  5. Preheat oven to 350F.
  6. Fill the shells with baking beans or with rice. Bake until the sides gets golden colour, about 15-18 minutes.
  7. Remove the baking beans and bake the shells for another 5-7 minutes. Cool in wire rack.
  8. FILLING: Blend all the ingredients till smooth.
  9. ASSEMBLING:) Transfer the filling mixture into prepared crust shells. Carefully smooth out the top. Sprinkle with some decorative toppings.
  10. Freeze for 4-5 hours or overnight.
