ABOUT Sabudana Croquettes and Patties... RECIPE

Deliciously crunchy and crisp patties and croquettes made with sabudana or sago pearls. These are the perfect snacks to be had after a day long routine with a hot cup of tea.

Ingredients Serving: 8

  1. Sago pearls 1 cup
  2. Potatoes parboiled large 2
  3. Salt to taste
  4. RED CHILLI POWDER 1 TBSP
  5. Turmeric 1/2 tsp
  6. Peanuts roasted and coarsely powdered 1/2 cup
  7. Roasted cumin powder 1 tsp
  8. Roasted coriander powder 1 tsp
  9. Coriander leaves chopped a handful
  10. Asafoetida 2 pinches
  11. Dry mango powder 1 tsp
  12. Chat masala 1 tsp

Instructions

  1. Soak the sabudana for 2 hours and then drain it.
  2. Keep it covered in a refrigerator overnight until use.
  3. Boil the potatoes next day before making them.
  4. They should be firm yet soft.
  5. Mash them well and keep aside.
  6. Roast the peanuts and powder them coarsely in a dry jar grinder attachment.
  7. In a large bowl, mix all the ingredients listed.
  8. There is no need of any water at all.
  9. Shape them into circular or oblong or both.
  10. Flatten them a bit with your palm if making round tikkis or patties.
  11. If making oblong or cylindrical, shape them accordingly.
  12. Deep fry them on medium to high flame in hot oil.
  13. They do not take much time to fry.
  14. Serve them hot with green coconut chutney like me.
