ABOUT Rajgira and Bajra veg Khichda RECIPE

Traditionally Khichda is non vegetarian dish which is very famous in North India but I made it with some changes, which is really successful and tasty recipe is innovate.

Ingredients Serving: 2

  1. 1/4 cup Rajgira
  2. 1/4 cup Bajra
  3. 2 tsp rice
  4. 2 tsp moong dal
  5. 2 tsp lal masoor dal
  6. 75 grm soya granules
  7. 1 onion chopped
  8. 3/4 tsp ginger paste
  9. 1 tsp garlic paste
  10. 2 bay leaves
  11. 1 cinnamon sticks
  12. 1 star anise
  13. 1 and 1/4 tsp corriender Powder
  14. 1 tsp red chilli powder
  15. 1/4 tsp termeric powder
  16. 1 green chilli chopped
  17. 2 pinch fennel powder
  18. 2 pinch toasted cumin powder
  19. 2 tsp whisked curd
  20. 1/4 tsp garam masala
  21. Salt to taste
  22. Oil for cooking
  23. For tempting,1 onion thin slice
  24. 2 tap boiled green peas
  25. 8-10 curry leaves
  26. 1/2 tsp cumin seeds
  27. 1/2 black mustard seeds
  28. 1/4 tsp assefotida
  29. 2 tsp desi ghee
  30. For Garnish,pudina,corriender,lemon wedges

Instructions

  1. Soaked Rajgira and Bajra in separate pot atleast 6-7 hours or for whole night,when it soaked nicely boil it with some salt in separate pressure cooker till it completely cooked.
  2. Take rice,moong and masoor dal in pressure cooker add some salt and boiled it completely.
  3. When Rajgira,Bajra and dal and rice mixture cool down mashed it with electric beater.
  4. Boil the water in pan add soya granules in it and soaked it for half an hour
  5. Now heat oil in deep pan add bay leaves,cinnamon sticks and star anise after a minute add chopped onion in it,when onion is translucent in colour add ginger,garlic paste in it and stir it for a min now add termeric powder,corriender powder and red chilli powder in it and stir well.
  6. Add roasted cumin powder and fennel powder in it,add curd and chopped green chilli,salt and mix well,now add soaked and squeezed soya granules in it and stir it for 3-4 minutes.
  7. Now add mashed Rajgira,Bajra and dal and rice mixture in masala and roast it till pleasant smell comes
  8. Now add some water in to cook and for making slurry mixture of it and cook it well.when it comes to final stage add garam masala in it,close the lid and switch of the gas.
  9. Now for tempting,hot ghee in pan add sliced onion when onion is brown in colour separate it from ghee,now add boiled green peas in it when it cracked add cumin, musrtard seeds,curry leaves and assefotida in it when pleasant smell comes switch off gas and pour this over the ready and hot veg khichda for more taste.
  10. Now Veg Rajgira and Bajra khichda is ready to serve,serve this khichda with fresh corriender,pudina and lemon wedges and with brown onion,serve hot for more taste.
