ABOUT Saffron cake RECIPE

Indian sweets, deserts are incomplete without Saffron. The most loved flavour saffron alongwith it's soul mate cardamom/ Elaichi brings the most richest taste in the dish we incorporate. So here is a beautiful tea time cake with the humble Saffron alongwith cardamom garnished with almonds.

Ingredients Serving: 5

  1. Flour (All purpose flour +whole wheat) - 1 1/2 cup
  2. Baking powder - 1 teaspoon
  3. Baking soda - 1/2 teaspoon
  4. Cardamom powder - 1 teaspoon
  5. Salt - 1/4 teaspoon
  6. Sugar - 1 cup
  7. Safron / kesar milk:
  8. Saffron / kesar - 1/2 teaspoon
  9. Milk - 3/4 cup
  10. Butter - 3 tablespoon
  11. Oil - 3 tablespoon
  12. Egg - 1

Instructions

  1. Add the safron to the milk and heat it up. Leave aside fir 15 minutes
  2. Preheat oven to 200 °
  3. Whisk and seive twice or thrice the first five ingredients. Keep aside.
  4. Now beat an egg in a clean bowl and whisk the remaining ingredients In it one after the other alongwith the safron milk
  5. Now spoon in 2 tbsps of flour mixture at a time into the wet mixture and mix using the cut and fold method
  6. Pour the batter into a prepared cake tin. Decorate with slivered almonds.
  7. Reduce the oven temperature to 170° and bake the cake for around 20 to 25 minutes
  8. Check for doneness in the last few minutes
