Ingredients Serving: 4

  1. Cashew nuts 1 cup
  2. Sugar 1/2 cup
  3. Water 1/3 cup
  4. Cocoa powder teaspoon
  5. Ghee1 teaspoon
  6. Ghee for greasing
  7. Dark chocolate compound 100 grams
  8. Chocolate transfer sheet as required

Instructions

  1. In a mixer jar, add cashew nuts and grind until smooth powder
  2. Do not grind too much otherwise it will start to ooze oil
  3. Add sugar and water in a pan and cook until sugar dissolves completely
  4. Cook until syrup turns thick and little sticky
  5. Do not wait until the syrup reaches to the one string consistency because if it is cooked more then one string consistency, the kaju katli will turn hard
  6. Reduce heat to low and add cashew nut powder and cocoa powder
  7. Stir with spatula and mix properly
  8. Cook and mix continuously until mixture thickens and leaves the sides of pan, do not over cook
  9. Turn off the flame and let it cool for 3-4 minutes
  10. Grease a plastic sheet, transfer the prepared mix over sheet
  11. Grease your palms with ghee and knead it for few minutes
  12. Roll it out into a desired thick round shape using a rolling pin
  13. You can also place a sheet over it to prevent dough sticking to rolling pin
  14. Cut it using a knife into diamond shape pieces
  15. Let it cool for 3-4 minutes
  16. Now melt dark chocolate in a double boiler or in the microwave
  17. Cut the transfer sheet to kaju katli size
  18. Apply melted chocolate on kaju katli and place the sheet over it
  19. Peel the sheet after 15-20 minutes
  20. Your kaju katli is ready to serve
  21. Serve or store in fridge
