ABOUT Coconut Milk Burfi RECIPE

Its a simple and tasty burfi which can be prepared for any festival.Traditionally burfi was made of which milk and sugar but in this recipe i used coconut milk

Ingredients Serving: 4

  1. Besan/Gram flour -1/2 cup
  2. Atta /Wheat flour -1/2 cup
  3. Grated coconut- 1/4 cup
  4. Ghee -1/2 cup+2 tbsp
  5. Sugar -2 cups
  6. Saffron- few strands
  7. Edible camphor-a mustard size
  8. cardamom powder-1/4 tsp
  9. Thick /1 st coconut milk -1/2 cup
  10. Thin/2 nd coconut milk-1/4 cup
  11. Very thin/3 rd coconut milk-1/8 cup

Instructions

  1. In a pan dry roast the grated coconut in low flame until it turns golden brown.keep it aside
  2. Same pan add 1 tbsp ghee roast the besan until raw smell goes away.keep it aside.
  3. Then follow the same procedure for atta too
  4. Grease a tray with little ghee and keep it ready
  5. Now add sugar,2 nd and 3 rd coconut milk in a pan
  6. Boil it until 1 string consistency that's when you touch the syrup in between your thumb and forefinger a string will be form
  7. Now add the saffron,roasted besan&atta&grated coconut.mix well
  8. Then add the thick coconut milk,stir well continuously.Add the rest of the ghee in between when you mix
  9. At one stage the mixture starts to froth here and there,then immediately switch off the flame.
  10. Add the crushed camphor,cardamom powder.mix well for a min.
  11. Immediately pour it into greased pan.let the mixture will be thin but when it cools down it will be thick.
  12. Once it warm slice it into desired shape
