ABOUT Pesto rice with crumbled cottage cheese RECIPE

Pesto rice is a mouth watering Italian dish made with basil and parmesean as key ingredients but here I have changed it into an Indian style using coriander and cottage cheese that's our favourite paneer as key ingredients.

Ingredients Serving: 4

  1. Cooked rice - 2 bowls
  2. Cottage cheese - 1/2 cup crumbled
  3. For the green pesto :
  4. Coriander - 1 bunch
  5. Garlic - 2 fat cloves
  6. Oil - 1 tbsp/olive or plain sunflower
  7. Green chillies - 3
  8. Vegetables :
  9. Carrot - 1
  10. Capsicum - 1/2
  11. Green peas - 1/4 cup
  12. Pepper - 1 tsp
  13. Salt to taste
  14. Lemon - 1/2
  15. Oil - 2 tbsp

Instructions

  1. Grind the pesto sauce with the oil and keep aside
  2. Take a sauce pan add 2 tbsp of oil
  3. Add the chopped carrot and peas, saute and cook till done
  4. Add the chopped capsicum, little salt and 1/2 tsp pepper
  5. Now stir fry on high for 3 to 4 minutes
  6. Now add the rice, mix well cover and keep for another 3 to 4 minutes
  7. Switch of the gas open the lid
  8. Add 3 to 4 tbsps of pesto sauce, pepper, lime juice and salt to taste
  9. Mix well. Add 1/2 part of crumbled cottage cheese and mix and use for garnish, the remaining half.
  10. Serve right away.
