ABOUT Baingan ka Bharta RECIPE

Grilled brinjal cooked in oil along with veggies.

Ingredients Serving: 2

  1. 1 Brinjal burnt on stove and kept overnight
  2. 1 large tomato or 2 small tomatoes diced
  3. Green peas (matar) - 3 tbsp
  4. 1.5 tbsp curd
  5. 4 tsp oil
  6. 1 large onion or 2 small onions chopped
  7. 1/2 tsp Mustard seeds (optional)
  8. 4-5 garlic cloves crushed
  9. Salt according to taste
  10. 1/4 tsp Red chili powder

Instructions

  1. Heat oil in a pan until it turns smoky
  2. Splutter mustard seeds
  3. Add diced tomatoes and cook until tender and mushy
  4. Add the green peas, garlic and onions and cook until onions are translucent
  5. Add the mashed brinjal and mix well. Add salt and red chili powder. Mix well
  6. Add curd and mix well. cook over low heat for 2-3 minutes
  7. Serve hot with rotis or parathas
