ABOUT Malabar Spinach Ambat RECIPE

Konkani style coconut curry using Vaali or Malabar Spinach; perfect with rice, chapatis, rotis, puris etc.

Ingredients Serving: 4

  1. 3 cups vaali/Ceylon spinach/Malabar spinach
  2. 1/2 cup chopped onions
  3. 1/4 cup cooked toor dal optional
  4. For the coconut masala:
  5. 3/4 cup grated coconut
  6. 6 to 10 dried red chilies (adjust)
  7. 1 teaspoon tamarind paste
  8. Salt to taste
  9. For the seasoning:
  10. 2 tablespoons coconut oil
  11. 1/4 cup chopped onions

Instructions

  1. Wash and chop the vaali bhaji (use only the tender stocks and leaves). Pressure cook vaali, onions with water just covering the veggies for 2 - 3 whistles.
  2. Grind the coconut, red chilies, little water and tamarind to form smooth paste
  3. Transfer the cooked Spinach mixture to kadai. Add ground paste with little water and mix well
  4. Add salt and bring to a boil. Simmer and cook for 5 to 7 minutes over low-medium heat
  5. In a small saucepan, heat oil and add 1/4 cup finely chopped onions. Fry on medium heat till the onions turn light brown.
  6. Add seasoning to the vaali ambat and mix well. Serve hot with rice or chapattis, rotis or bread.
