ABOUT Crispy Potato Greens RECIPE

This is my innovation in green leafy vegetables along with crisp potato disc, this is a diffrent kind of green curry in which i used three types of green leafy vegetables , that can be a perfect dish for any dinner party

Ingredients Serving: 2

  1. For gravy:-
  2. 100 gram spinach
  3. 100 gram radish leaves
  4. 100 gram chana leaves or chana bhaji
  5. 2 tbsp fresh cream
  6. 1 tbsp butter
  7. 2 tbsp oil
  8. 1/4 tsp baking soda
  9. 5 garlic cloves
  10. 2 medium sized onions roughly chopped
  11. 4 green chilies
  12. 1 inch ginger
  13. 1 tsp red chili powder
  14. 1/2 tsp cumin
  15. 1/2 tsp turmeric powder
  16. 1/2 tsp garam masala
  17. Salt to taste
  18. For potato disc
  19. 2 medium sized potato
  20. 1/2 tsp red chili powder
  21. 1/2 tsp salt
  22. 1/2 tsp turmeric powder
  23. 1/2 tsp kasuri methi
  24. 1 tbsp gram flour
  25. 1 tbsp oil
  26. Oil for shallow fry

Instructions

  1. Finely chop radish leaves , spinach leaves and chana leaves
  2. Boil water in a pan. Add ginger , garlic ,onion and green chilies
  3. Add leafy vegetables and boil for 5-6 minutes by adding baking soda
  4. Drain excess water , cool completely and grind to smooth thick paste
  5. Now in a water bowl , cut the potatoes into thin round disc shape
  6. Strain water and marinate the potatoes with red chili powder , turmeric powder ,salt , gram flour , kasuri methi and oil
  7. Toss the potato slices to coat the spices properly
  8. In a griddle or a pan, shallow fry the potatoes till crisp
  9. Heat oil in a pan, splutter cumin seeds and then add prepared gravy and spice powders. Mix well and cook till oil starts leaving the sides
  10. Switch off. Add butter to the gravy and serve with crispy potato disc
