Ingredients Serving: 4

  1. Palak / spinach - 900 gms
  2. Cottage cheese / paneer - 250 gms, cubed
  3. Cumin seeds - 1/4 tsp
  4. Finely chopped garlic cloves - 1 tbsp
  5. Lemon juice - 1 tbsp
  6. Fresh cream - 1 tbsp
  7. Green chili - 4
  8. Salt - to taste
  9. Water - 1/4 cup
  10. Oil - 3 - 4 tbsp

Instructions

  1. Wash and chop Spinach leaves. Add leaves to boiling water with little salt and blanch for 3-4 minutes
  2. Drain excess water and grind leaves with green chilies to form smooth puree
  3. Heat oil in a pan and splutter cumin seeds
  4. Add chopped garlic and stir fry till aromatic
  5. Add ground puree with 1/4 cup water and mix well.
  6. Add paneer cubes and gently mix
  7. Cover it and cook over low flame for 3-5 minutes
  8. Garnish with fresh cream and serve.
