Ingredients Serving: 3

  1. Peas-1 cup fresh
  2. Ginger -1/2 tsp grated
  3. cumin seeds-1 tsp
  4. Ginger paste-1 tsp
  5. Turmeric powder-1/2 tsp
  6. Red chili powder-1 tsp
  7. Salt to taste
  8. Roasted cumin powder-1 tsp
  9. Mustard oil-1 tbsp
  10. Maida or all purpose flour-2 cups
  11. Ghee or clarified butter-2 tbsp
  12. Oil-1 tsp+2 cups
  13. Warm water - 1/4 cup

Instructions

  1. Grind peas, grated ginger with little water to form smooth paste
  2. Mix ginger paste,turmeric powder,red chili powder using little water to form smooth masala paste
  3. Heat mustard oil in a pan and splutter cumin seeds
  4. Add masala paste in pan and mix well. Saute for 1 minute
  5. Add ground peas mixture and keep stirring continuously.
  6. Add dry roasted cumin powder and salt. Mix well
  7. Cook until oil separates. Switch off. Cool the mixture to room temperature
  8. Grease palms, take 1 tsp of mixture and make small balls. The mixture can be refrigerated too for later use
  9. Add flour with little salt in a big bowl and mix well
  10. Make well in the center of the flour and pour oil and clarified butter (ghee). Mix well until crumbly
  11. Add warm water gradually and knead soft dough
  12. Cover dough with foil or cling film for 15 minutes. Divide dough into equal portions and shape them into balls
  13. Press dough ball gently at center to make small hole
  14. Now add a ball of stuffing to this hole and gently seal edges completely
  15. Lightly flatten it with a rolling pin
  16. Heat 2 cups oil in a pan over high heat and then simmer
  17. Deep fry kachori on both sides until golden brown. Fry kachoris in batches
  18. Serve Kachori with Bengali aloo dum or with gravy of your choice
