Peyaj Shak er Tel Jhal / Bengali Style Spring Onion Curry is an authentic style Bengali dish. Tel jhal is a type of method where cooking should be done on the bed of oil with no water or very less amount of water. This is a dish usually cooked during the winter season when there is a lot of production of fresh spring onions and brinjal. Slice of potato and brinjal has to be thin so that it cooks faster.

Ingredients Serving: 4

  1. Spring Onion - 5 to 6 , cleaned and cut into 1 inch pieces
  2. Potato - 2 medium, elongated slices
  3. Brinjal (Bharta) - 1 Medium size, elongated slices
  4. Tomato - 1 small, sliced
  5. Green chili - 2
  6. Coriander Powder - 11/2 teaspoon
  7. Cumin Powder - 11/2 teaspoon
  8. Red Chili Powder - 1/2 teaspoon
  9. Turmeric - 1 teaspoon
  10. Sugar - 1/2 teaspoon
  11. Salt to taste
  12. Mustard Oil - 5 to 6 tablespoon
  13. Nigella Seeds - 1/2 teaspoon

Instructions

  1. Heat oil in a pan and add nigella seeds.
  2. Once it starts crackling, add potato and brinjal pieces and mix well
  3. Simmer, cover and cook for 5 minutes
  4. Now in a bowl , add turmeric powder (1/2 teaspoon), coriander powder, cumin powder, red chili powder and sugar and little water , mix well to form thick paste and keep it aside
  5. Add salt and remaining turmeric powder to veggies and mix well
  6. Add chopped green chilies ,chopped tomatoes and cook until tomatoes are mushy
  7. Now add the spice mix paste and mix well. Cook for 3-4 minutes
  8. Add chopped spring onions and mix. Cover and cook until tender
  9. Add salt and mix well. Switch off once water has almost evaporated
  10. Serve hot with plain rice.
