ABOUT Bakhmri/Khameeri.. RECIPE

The fried dough called Bakhmri is famous food eaten in Hadramout, Yemen and has it's similar cousins in East Africa, India and many Arab countries as well. This bread like treat is made either sweet or savoury depending upon individual choices. Here iam presenting these sweet Bakhmri for you all to try. Simple and delicious fried bread that just melts in your mouth. Cardamom and nigella seeds add an altogether different dimension to this lovely fried treat. Happy Frying !!!!!!!!!!

Ingredients Serving: 6

  1. All purpose flour 2 cups
  2. Milk powder 2 tbsp
  3. cardamom powder 1 tsp
  4. Active dry yeast 2 tsp
  5. Powdered sugar 1/4 th cup
  6. Blackseeds or nigella seeds 1 tsp
  7. Salt 1/8 th tsp
  8. Sesame seeds 1 tbsp
  9. Melted butter 1 tbsp
  10. Warm milk or water 1 cup (use accordingly)

Instructions

  1. Add yeast to the warm milk and stir it lightly. Keep it aside to prove.
  2. Mix sugar, flour, milk powder, salt, cardamom powder and nigella seeds well.
  3. After 5 minutes of standing time, add the yeast mix to the dry ingredients along with the melted butter.
  4. Make a smooth dough out of it.
  5. Cover and set aside for about 2 hours.
  6. The quantity of milk or water added depends upon the quality of the flour used. Therefore add them accordingly.
  7. After 2 hours, punch the dough to release the excess air trapped inside and bring it onto the working surface.
  8. Divide the dough into 3 or 4 parts.
  9. It becomes easier to roll them if done like this. Roll each into 1 cm thick disc.
  10. Cut out triangular shapes and set aside for another 30 minutes for second proofing.
  11. After 30 minutes, deep fry them in hot oil on medium flame until golden brown.
  12. Best served warm with a mug of coffee or tea.
