ABOUT Winter Special Methi(fenugreek) khichdi RECIPE

This khichdi is specially made in winter season in Utterpradesh villages .My grandmother used to make this khichdi when we were small,loved to eat this hot hot ' khichdi made from methi seeds in chilled winters in the presence of Sunlight .

Ingredients Serving: 3

  1. Rice 1 cup
  2. Methi seeds 3 tablespoon+1/2cup water
  3. Green chillies to taste
  4. Salt to taste
  5. Oil 3 tablespoon
  6. Water-2 cup+water preserved from Soaked methi seeds (as per rice age

Instructions

  1. Soak fenugreek seeds in enough water (1/2 cup)for overnight
  2. Next day separate fenugreek seeds from water by pasing through a sieve and preserve the water ,for cooking khichdi.
  3. Rinse Rice with water 3 - 4 times . And keep it aside.
  4. Now heat oil in a coooker on high flame when oil becomes smoky hot,reduce the flame and add in soaked fenugreek seeds.
  5. Fry fenugreek until light golden brown or to take out raw smell of Fenugreek.
  6. Add in chopped green chillies and fry for a while.
  7. add in soaked rice and fry for a while.
  8. Add in required amount of water, soaked methi water and salt to taste.
  9. Put on the lid and keep the flame to medium and cook until 1 whistle comes.
  10. Switch of the the flame .
  11. Allow the pressure to comes out itself and open the lid of a cooker.
  12. Serve 'Methi ki kichdi' with mint, coriander ,tomato and green chilli chutney or chutney of your choice.
  13. In winters this is the best quick ,healrhy and easy lunch you can have to keep your body warm.
