Ingredients to make Spring Rolls

  • To make gajar halwa :
  • Red carrots 1/2 kilo
  • Milk 1 liter
  • sugar 1/2 cup less or more to your taste
  • Milk powder 1 tbsp
  • clarified butter 2 tbsp
  • Chopped dry fruits handful
  • To make Rabdi :
  • 1/2 liter milk
  • 1/4 cup sugar
  • To make Spring rolls :
  • Spring roll sheets readymade 12
  • maida slurry 1/4 cup
  • oil to deep fry

How to make Spring Rolls

  1. GRATE 500 GMS PEELED RED CARROTS
  2. KEEP 1 LITRE MILK TO BOIL IN A NON STICK PAN
  3. AS THE MILK COMES TO A BOIL, ADD THE GRATED CARROTS, STIR & COOK ON LOW HEAT
  4. WHEN THE MILK DRIES UP, ADD 2 TSP GHEE & 1/2 CUP SUGAR, MIX AND COOK FOR A FEW MORE MINS
  5. MIX WELL TILL THE WATER FROM THE SUGAR DRIES UP COMPLETELY
  6. ADD 1 TBSP MILK POWDER, MIX
  7. TRANSFER THE HALWA TO A BOWL, ADD A HANDFUL OF CHOPPED NUTS
  8. FOR MAKING RABDI, BOIL 500 ML MILK
  9. ADD 1/4 CUP SUGAR, STIR CONTINUOUSLY
  10. STIR & COOK TILL THICK, TAKE OFF HEAT, KEEP TO COOL
  11. KEEP SPRING ROLL SHEETS COVERED IN WET CLOTH
  12. MIX 2 TBSP WATER + 2 TBSP FLOUR TO MAKE A THICK SLURRY
  13. PLACE GAJAR HALWA ON ONE CORNER OF THE SHEET, GENTLY FOLD LIKE THIS
  14. ROLL IT TIGHT THIS WAY BY TUCKING THE CORNERS
  15. APPLY THE FLOUR-WATER SLURRY AND FOLD
  16. DEEP FRY ON LOW HEAT TILL GOLDEN BROWN & CRISP
  17. DRAIN ON A KITCHEN TOWEL
